This wine is a Noble Late Harvest made from 100% Chenin Blanc.
We did three pickings, hand selecting only bunches that were perfectly infected with Noble Rot - the beneficial fungus that initiates a meticulous and advanced winemaking process. The grapes were harvested at a sugar level of around 42° Brix and at an acidity of 11.0 g/l.
Crushing and Pressing
After harvesting, the grapes were delivered to the winery and placed directly into cold storage overnight, thereby dropping the temperature of the grapes down to around 4° Celsius. Whole bunches were then crushed into bins for a 24 hour cold soak before initiating the fermentation process. Fermentation on the skins took 4 days, before the grapes were pressed.
Thereafter, the juice was racked into 400 litre, old French oak barrels to commence the natural fermentation process, which took 3 months to complete. The process stopped naturally at the perfect balance of sweetness, acidity and alcohol.
The wine was bottled in August 2015. Only 1500½ bottles were produced.

The wine has a rich, deep golden hue.
The nose is accented by intense aromas of apricot, quince, grilled pineapple and ginger spice.
The wine enters the palate fully and richly, with intense flavours of poached pears, quince, honey glazed almonds and ginger bread. There is a tannic grip to the mid-palate, leading to a clean, crisp finish. The wine embodies the perfect balance between acidity and sweetness.
Pair with fresh, pan-seared foie gras or foie gras pâté served on crostini, with herb salad accompanied by a dessert of crêpes and a citrusy syrup or an assortment of mature, hard cheese and nuts.
To be enjoyed immediately after release, but will benefit with cellaring for up to 5 years from harvest.
