SAUVIGNON BLANC

2023

This is a 100% Sauvignon blanc from a certified old vines bush vine vineyard planted in 1986 in the Bottelary ward of Stellenbosch, growing on decomposed shale soils. This wine displays a brilliant light-yellow straw colour. Fragrant cut grass, lemongrass, cape gooseberry, green fig and passionfruit aromas emanate from the glass underpinned by hints of dry straw and toasted almonds. There is a great intensity on the entry of the palate with flavours of dried pear, guava and lemongrass on the mid-palate with hints of toasted almonds and a velvety creaminess. This all leads to a textured pithy finish with a stunning length and a freshness reminiscent of oyster shell.

Food Pairing
This wine is a perfect accompaniment to fresh oysters, grilled fish and chicken dishes.

This is a 100% Sauvignon blanc from a certified old vines bush vine vineyard planted in 1986 in the Bottelary ward of Stellenbosch, growing on decomposed shale soils.

The grapes were hand harvested into small grape crates and placed in a cold store overnight. The following day the grapes were bunch sorted and whole bunch pressed into tank for overnight settling without the addition of Sulphur dioxide before being taken to 400L old French oak barrels for fermentation. The fermentation is allowed to start naturally and once completed the wine is topped and matured sur-lie for 11 months with regular lees stirring. The wine does not undergo malolactic fermentation. This wine was bottled in January 2024.
